Fettuccine with chicken & pumpkin wine sauce

A little experimentation yields success!

You can easily multiply this to make for a group. I made this for myself first to ensure it was edible and found it was AMAZING. Next step is serving the family!

This is easily a whole meal. Or you could make 2 portions and serve it to 3, and add some veggies on the side.

Ingredients

    Per serving:
    2 oz fettuccine, measured dry
    1/4 cup chopped onions
    1 tsp oil
    1 clove garlic, minced/pressed
    1/4 cup canned pumpkin
    1 fl oz (2 tbsp) white wine
    1/2 cup chicken broth
    1 cup thinly sliced zucchini (think long matchsticks,) microwaved for 30 sec to 1 min to cook halfway
    3 oz grilled skinless boneless chicken breast, cut into bite sized pieces
    salt and pepper to taste

Directions

Boil fettuccine.

heat nonstick skillet, add oil, and sweat the onions over medium to medium low heat until translucent, add add garlic. Cook 30 seconds more.

Add pumpkin and cook until mixture blends well, 1 minute or so. Add wine and cook until slightly reduced. Add half the broth and cook down, add remaining broth and cook until slightly reduced and slightly thickened. Add salt and pepper to taste.

Add the zucchini, fettuccine and chicken to the sauce to heat through, and let absorb the sauce.

Turn out into a pasta bowl and serve.
