Easy Peasy Cider-Butternut Squash soup

Super easy, super delicious, super nutritious Super easy, super delicious, super nutritious
Number of Servings: 1

Ingredients

    4 cups winter (butternut/acorn) squash (or 3 10oz boxes frozen)
    32 oz container chicken broth
    1 cup apple cider

Directions

1. Peel and cube squash (or defrost frozen squash)
2. Put in slow cooker with chicken broth and curry powder and cook till soft
3. add cider
4. Either blend or use a stick blender until smooth
5. Good warm or at room temperature.

    The curry pweder (mentioned in the directions and full nutritional breakdown) is missing from the ingredients. It looks like it's meant to be 1 tablespoon. Also a pot of soup made from 32 oz (a quart) of broth and four cups of squash (or three boxes of frozen) seems like a lot for ONE serving. - 12/5/09
