Four Cheese Sauce

Introduction

This is great mixed with macaroni, pasta, rice, as a base for chicken or tuna casserole, or as a sauce for chicken or fish. This is great mixed with macaroni, pasta, rice, as a base for chicken or tuna casserole, or as a sauce for chicken or fish.
Number of Servings: 4

Ingredients

    2 Tbsp. butter
    2 Tbsp. flour
    1 cup 2% milk
    3/4 cup shredded colby jack cheese
    1 oz slice pepper jack cheese, torn into small pieces
    1/4 cup parmesan cheese
    1 tsp. paprika

Directions

In a medium saucepan, melt butter over medium low heat. Add flour and mix well to form a paste. Over medium to medium low heat, gradually add the milk a little bit at a time, while stirring constantly. Gradually add the cheese a bit at a time, stirring to melt and incorporate it after each addition. Add paprika.
*if sauce is too thick, incorporate about 1/4 to 1/2 cup water gradually while mixing well.

One serving equals 1/2 cup. Makes about 1.5 to 2 cups.
