Easy Peasy Cider-Butternut Squash soup

Number of Servings: 8

Ingredients

    4 cups winter (butternut/acorn) squash (or 3 10oz boxes frozen)
    32 oz container chicken broth
    1 cup apple cider

Directions

1. Peel and cube squash (or defrost frozen squash)
2. Put in slow cooker with chicken broth and curry powder and cook till soft (Or if using frozen, just mix with broth and cider and heat to a simmer.)
3. add cider
4. Either blend or use a stick blender until smooth
5. Good warm or at room temperature.
