Ingredients

*Potato, raw, 3 medium (2-1/4" to 3-1/4" dia.) cut into large cubes
Green Peppers (bell peppers), 1 cup, chopped
*Peppers, sweet, red, fresh, 1 cup, chopped
Red Ripe Tomatoes, 3 plum tomato, chopped
Zucchini, baby, 2 medium chopped
Onions, raw, .5 cup, chopped
Egg, fresh, 6 large (remove)
Olive Oil, 2.5 tbsp (remove)
salt & pepper to taste
Directions
add olive oil to pan and heat on medium high, add potatos and cook for about 5 minutes, stirring, add other vegetables, cover and lower heat to medium and cook until potatos are tender, stirring occasionally so that do not burn. When potatos are tender, scramble eggs and add to mixture, place wedges of cheese on top, cover and cook 10 - 15 minutes or until eggs are done and cheese is melted.
