Introduction

Healthy and delicious chicken casserole topped with peas Healthy and delicious chicken casserole topped with peas
Number of Servings: 6

Ingredients

    3 cups cooked brown rice (1 cup dry rice and 2 cups water, simmer until tender and fluff with fork)
    3 skinless chicken breasts, cooked and cut into bite-sized pieces
    1 can Cream of Chicken soup, undiluted
    1 cup plain low fat yogurt (or you can substitute light sour cream)
    1 Tbs. lemon juice
    2 Tbs. olive oil
    1 cup mushrooms, chopped
    1 cup celery, chopped
    1 medium onion, (1 cup) chopped
    1 � cups frozen peas, cooked

Directions

1.Saute onion, celery & mushrooms in oil and cook until tender
2.Mix together soup with yogurt and lemon juice
3.Stir the sauted veggies and the cooked chicken into the soup mixture
4.Spray a baking dish with Pam and spread a layer of the cooked rice on the bottom of dish
5.Pour soup mixture over rice and spread evenly
6.Cook at 350 degrees for 20 minutes, until warmed through
7.Top with cooked peas and serve
