Introduction

Number of Servings: 6

Ingredients

    4 i/2 cups cooked potatoes, cubed
    1 cup cucumber, chopped
    1 tsp celery seed
    1/4 tsp ground black pepper
    1/2 tsp Mrs. Dash seasoning
    1 tbsp Honey Difon mustard
    1 tbsp olive oil
    1 cup onions, chopped
    1/2 cup white vinegar
    3 tbsp water
    1/2 tbsp cornstarch
    1 pkg Splenda (optional)

Directions

Yields 6 one cup servings

In a large bowl toss together potatoes, cucumbers, celery seed, black pepper, Mrs Dash and mustard; Set aside.
in another bowl combine vinegar, water, cornstarch and Splenda if using; set aside
In a nonstick skillet heat olive oil. Add onions and cook until translucent. Add in vinegar mixture and bring to a boil. Cook until it slightly thickens, about 2 minutes. Remove from heat and pour over potato mixture. Toss to combine. Cover with plastic wrap and place in frig for at least 2 hours. can eat cold or at room temperture.
