Strawberry Spinach Salad

Ingredients

    -9 oz baby spinach
    -8 oz butter crunch lettuce or red leaf lettuce
    -1 lb. fresh strawberries, sliced
    -1pt fresh blueberries
    -1/2 c slivered almonds
    -1/2c dried cranberries
    -1/2c crumbled red-fat blue cheese

    DRESSING:
    -1/8 c sugar
    -4 TBSP EACH of red wine vinegar and balsamic vinegar
    -1/2 cup canola oil (or you can try less)
    -1/4 tsp salt
    -1/2 tsp dry mustard or yellow mustard

    GARNISH:
    -About 2 tsp EACH of sesame and poppy seeds

    OPTIONAL: (not included in nutritional values)
    mandarin oranges, blackberries, grated red onion

Directions

Mix dressing ingredients in food processor or blender.
Put all ingredients in a large bowl and mix well. Refrigerate at least one hour to let flavors blend.

This makes a very large salad. I am not sure how many servings there are. I would guess about 15 1-cup servings.
