Ingredients

    Ingredients:
    Carrots, cooked, 8 cup slices
    Onions, raw, 2 medium (2-1/2" dia)
    Smart Balance, Smart Balance Omega Plus Buttery Spread, 1 Tbsp, 5 serving
    Cream of Celery Soup, 1 can (10.75 oz), prepared
    Salt, 0.5 tsp
    Pepper, black, 0.5 tsp
    Cheddar Cheese, 1 cup, shredded
    Croutons, seasoned, 1 cup

Directions

Place carrots in a saucepan and cover with water; bring to a boil. Cook until crisp tender. Meanwhile in a skillet, saute onions in 3 TBSP. smart balance spread, until tender. Stir in the soup, salt, pepper, and cheddar cheese. Drain carrots; add to the onion mixture. Transfer to a greased 13 x 9 in. baking dish. Sprinkle with croutons. Bake uncovered at 350 degrees for 20-25 minutes. Until hot and bubbly and lightly browned. Makes 10-12 3/4 cup servings
