I came up with this as a way to incorporate more vegetables in my diet. I don't always follow the vegetables listed, but just start throwing in whatever I feel like, such as broccoli, cauliflower, spinach, green beans, tomatoes, etc. Just start throwing them in and you can have a lot of variety in your vegetables! You can try different seasoning too! Seasoned salt works well, just use it in moderation. Garlic squeezed over the top...yum!! Use your imagination! Ingredients

Onions, raw, 1 cup, chopped
Celery, raw, 1 cup, diced
Green Peppers (bell peppers), 0.5 cup, chopped
Yellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)
Zucchini, 1 cup, sliced
Fresh Chives, 4 tbsp chopped
Olive Oil, 2 tsp.
Carrots, raw, .5 cup, chopped
*Peppers, sweet, red, fresh, .5 cup, chopped
Chicken Breast, no skin, 5 ounces, cooked and cut up
Italian seasoning 2 tsp.
Directions
Add oil to nonstick pan. Add onions and celery or whatever vegetables you are using that take the longest to cook. Cook 2-3 minutes or until slightly soft. Add the peppers (all varieties) and chives, and carrots. Fry for about 5-8 minutes. Add zucchini, chicken and seasoning and cook for 2-3 more minutes or until chicken is hot.
