Comforting Vegetable Soup

Introduction

I love making a huge pot of vegetable soup and having a lot of leftovers. It is great for me to take for lunch and even easier to freeze in batches! I love making a huge pot of vegetable soup and having a lot of leftovers. It is great for me to take for lunch and even easier to freeze in batches!
Number of Servings: 12

Ingredients

    2 boxes (32oz) beef or vegetable broth
    2 idaho potatoes, peeled and diced
    2 medium onions, diced
    1 cup chopped carrots
    1 cup chopped celery
    2 cups broccoli
    1 yellow squash
    1 zucchini
    2 cans diced tomatoes
    2 cups frozen corn
    1 cup frozen green beans
    1/2 head of cabbage chopped
    2 bay leaves (i used dried)

Directions

In a large pot, pour broth in. Put in all vegetables, bay leaves and season with salt and pepper. Bring to a boil. Once it boils, reduce to a simmer and cook for at least one hour. I like to simmer this all day. It is a fool proof recipe!
