1 zucchini 10oz/300g
1 oz spaghetti noodles cooked per package directions
1 tsp garlic minced
1/2-1 tbsp Olive Oil (use more or less as you prefer)
1/4-1/2 tsp Crushed Red Pepper
splash of lemon juice
salt/pepper to taste
Boil pasta as per package directions. I used a veggie peeler to just make long ribbons out of the zucchini but I imagine you can cut it any way you fancy.
Saute the garlic in oil in a large skillet, add zucchini and toss to coat with a bit of the oil, do NOT overcook, add spaghetti noodles and toss with the crushed red pepper, lemon juice and season to taste with salt or pepper if needed.
