Spicy Tomato Soup

Introduction

This spicy tomato soup (not cream-based) is an attempt to recreate a canned soup I had from Sainsbury's years ago. I planned this for 4 servings, but you could easily split this into smaller servings because 1/4 is a BIG bowl of soup. Ingredients

    1 tablespoon olive oil
    1 medium red onion (about 1 cup), chopped
    2 medium clove garlic, minced
    1/2 teaspoon salt
    1/2 teaspoon freshly ground pepper
    1/8 cup jalapeno pepper, seeded and finely diced
    28-oz can diced tomatoes, no salt added, drained
    15 oz diced tomatoes, no salt added, with juice
    12 oz low-sodium V8 juice
    1/2 cup reduced-sodium chicken broth
    1 tablespoon fresh lime juice
    1 T cilantro, finely chopped
    2 t Mrs Dash (I chose Fiesta Lime)
    1 t garlic powder
    2 t parsley

Directions

1. Heat olive oil in a deep saucepan over medium-low heat. Add onions and garlic and cook until onions are soft and translucent, about 5 to 7 minutes. Add salt, pepper, cilantro, and jalapeno.
2. Drain large can of tomatoes; add drained tomatoes, as well as remaining ingredients, except parsley. Simmer for about 20 minutes.
3. Add parsley and adjust seasoning as desired; simmer at least 5 more minutes.. Divide among 4 soup bowls.
