Cheesy Potato Soup

Introduction

Thick and creamy potato soup with cheese Thick and creamy potato soup with cheese
Number of Servings: 8

Ingredients

    3 pounds of red potatoes, peeled and diced
    1 can of chicken broth
    1 can of cream of chicken soup
    1 can of cream of celery soup
    10 ounces of 2% Velveeta cheese, cubed
    light sour cream (for topping, optional)

Directions

Boil potatoes in large pot until done through. Drain completely.

Meanwhile, place chicken broth and soups in a separate pot. Cook until hot throughout, stirring occastionally. Do not boil. Add cheese cubes and stir until melted.

Pour mixture over cooked, drained potatoes. Stir well. Add salt and pepper to taste.

Top with sour cream when serving, if desired.
