My Healthy Lasagne

Introduction

This is an absolutely delicious version of a classic lasagne. It is made with Laura's Lean Ground Beef (4% fat), lots of veggies, and low-fat mozarella cheese on top. Ingredients

    Sauce:
    1. 1 med. zucchini
    2. 1 small summer squash
    3. 1/2 cup bell peppers
    4. 1/2 cup mushroom slices
    5. 1 lb. Laura's Lean Ground Beef
    6. 1 jar Ragu Old World Style Spaghetti Sauce

    Pasta and Topping:
    10 pieces Barilla lasagne
    2/3 cup Weight Watchers Shredded Mozarella Cheese

Directions

Brown the beef in a skillet over medium-high heat. Add mushrooms, zucchini, summer squash, and bell peppers. Cook for 2-3 minutes. Add Spaghetti Sauce to beef and vegetables. Cook on low heat for 5 minutes.

In a large pot, boil water and add lasagne. Cook until soft.

Preheat oven to 375, and spray nonstick cooking spray to 2 small glass baking dishes.

When pasta is cooked, drain and place a layer of pasta on the bottom of each dish. Add a layer of sauce. Repeat this process until there is no more pasta and sauce. Add 1/3 cup mozarella cheese to the tops of each dish.

Bake for 10 minutes at 375.
