Veggetarian Beef Soup

Introduction

A nice warm soup for those cold rainy days. A nice warm soup for those cold rainy days.
Number of Servings: 2

Ingredients

    1 14oz can Beef Broth
    1/4 cup black beans
    1/4 cup canned tomatoes, chopped with green pepper
    4 mushrooms, chopped
    1/4 onion, chopped
    2 garlic cloves, chopped
    Taco seasoning
    Cheese (opt)
    Sour cream (opt)

Directions

Makes Two Servings.

Saute the chopped onion until glassy, about two minutes. Add the garlic and mushroom and cook until garlic is fragrant. Add beef broth. Fill the broth can halfway with water and add to the soup. Add the taco seasoning, tomatoes, and beans. Simmer about twenty minutes.

If desired, top with cheese and a dollop of sour cream. Nutritional information assumes such toppings (1 tbs cheese and 1 tbs sour cream).
