1 Tbsp olive oil
12 oz lean boneless pork cut into bite-sized pieces
1 cup chopped red onion
4 cloves garlic, minced
1 1/4 cups corn
3 1/2 cups 99% fat free chicken broth
1 cup salsa
1 cup chopped green, red or yellow pepper
1/2 cup chopped tomato
1/4 cup snipped fresh cilantro
Low fat sour cream if desired
Add corn; cook 4 minutes. Stir in chicken broth, salsa and peppers. Bring to a boil; reduce heat and simmer, uncovered, for 10 minutes more. Return pork strips to saucepan; heat through. Remove saucepan from heat; stir in tomato and cilantro. Top individual servings with sour cream if desired.
Makes 5 (1 1/3 cup) servings.
