Introduction

Quick and Easy Tortilla Soup Quick and Easy Tortilla Soup
Number of Servings: 6

Ingredients

    1 Onion, Chopped
    2 Cloves Garlic, minced
    2 tsp Cumin
    1/4 Teaspoon Pepper
    2 Cups Veggie Broth
    1 Can Stewed Tomatoes
    1 Small Can Corn
    1 Can Chile Peppers
    1/4 Cup Fresh Cilantro, chopped (I use more!)
    1 Handful Tortilla chips (fritos)

Directions

Saute onion, garlic, cumin and pepper.
Add broth, tomatoes, corn and chiles. Stir and bring to a boil. Reduce to low and simmer for 10 minutes. Stir in Cilantro in the last few minutes of cooking. Sprinkle tortilla chips on top. Can garnish with cheese also.
