Bean and Millet Salad

Introduction

This is an amazing salad that I usually serve cold. It is very tasty and so good for you, even my girls love this salad! Feel free to add any fresh vegetables that you love. Number of Servings: 6

Ingredients

    1 cup of uncooked millet
    3 cups of water
    1/2 cup black beans
    1/2 cup chickpeas
    1/2 cup red kidney beans
    1 cup tomato, chopped
    1 medium onion, chopped
    1 medium cucumber, peeled, seeded and cut into chunks
    1 medium yellow zucchini, peeled, seeded and cut
    1/3 cup water
    3 tbsp. lemon juice
    2 tsp. balsamic vinager
    1 tsp. minced garlic
    1 tsp. salt
    1/4 tsp. allspice
    1/4 tsp. black pepper
    1/2 tsp. cumin

Directions

1. Bring 3 cups of water to a boil, add millet, cover and reduce heat. Simmer and cook until all water is absorbed about 30 - 45 minutes. Fluff with a fork and allow to cool slightly.

2. While millet is cooking, prepare all other ingredients and put them in a very large bowl. Add millet when finished, toss to comine all ingredients and serve.

Makes approximately 6 1-cup servings
