Black Bean and Rice Salad

Ingredients

2 cups chopped romaine lettuce
2 cups cooked brown rice, chilled
1 15 oz can black beans, rinsed and drained
2 cups chopped tomato
1 cup chopped green pepper
1 cup frozen corn, thawed
2 green onions, thinly sliced
2 tablespoons snipped fresh cilantro
1 cup salsa
1/2 cup low fat sour cream
Directions
In a large bowl stir together lettuce, chilled rice, beans, tomato, sweet pepper, corn, green onion and cilantro; add salsa. Toss to coat. Serve with sour cream.
