Ingredients

    2 pounds boneless, skinless chicken
    breasts
    4 cloves garlic, peeled and crushed
    4 tomatoes, chopped or one 14.5-ounce can low-sodium tomatoes, drained
    4 medium ribs celery, diced (1 cup)
    2 small zucchini, diced (2 cups)
    1 bell pepper, cored, seeded, and diced
    One 18-ounce jar low-sodium marinara
    sauce
    1 tsp dried basil
    1 tsp dried thyme

Directions

1. Place the chicken in the slow cooker; add the
garlic, tomatoes, celery, zucchini, and pepper.
Pour the marinara sauce over all, and sprinkle
the basil and thyme on top.
2. Set the slow cooker on low and cook for 6
to 7 hours. Before serving, shred the chicken
with a fork.

    This recipe was easy to make which is a must for me. I served it over whole wheat pasta and it was DELICIOUS! I didn't use celery b/c I didn't have it. I also used a can of diced tomatoes with chiles and it gave it spice :) I think I will add mushrooms next time. I will definitely make it again - 12/27/09

    This was really good..whole family enjoyed it. My wife and I used frozen chicken breasts and we were kinda surprised at the low calories at 164 per serving...this true? No matter...it's a healthy meal that tastes great. We did *not* add anything to the menu such as pasta... - 3/17/10

    Not worth the slow cooking - all veggies can be placed in a pan along with the chicken and it all can be ready in 30 minutes... then add less marinara and let simmer another 10 minutes and that's all, no need to wait for 365 minutes...

    The celery has a strong taste - one cup of it is too much. - 7/21/10

    Yes, in the oven is great too! If I make in the oven I reduce the celery by 1/4 cup. Some members just have to have their crock pot recipes. Chef Meg

    suggestion: buy rotisserie chicken and shredded it. If you have a digital scale and measure the amount you need and save the rest for chicken salad. I have made this before but not with jar sauce.. I used tomato puree and the veggies... served over whole wheat spaghetti. Topped with parmesan. - 8/10/10

    My family loved this, but I added extra spices because some comments mentioned it needed something. I added 4 whole bay leaves, 1 diced onion, 1 tsp red pepper flakes, and 1/2 tsp black pepper. - 9/9/10

    Very good. Slow cooker is nice if I set up before going to work. I agree, this can be done very quickly in a large saute pan on stove top. I add oregano, that's just me. This will support additional veggies, we like to add sauteed mushrooms, onions, shredded carrots in addition to zucchini. - 1/22/11

    I like how easy this was to make and how full of veggies it was. There was way too much liquid in the crockpot after cooking so I put the liquid in a pot and boiled it to thicken it up. Served it over whole-wheat pasta. It was a bit bland but that's just the lack of salt. Leftovers freeze well. - 6/26/10

    Love that it can cover several meals and in different ways. Had it on pasta and will have it over baked potato later. Hopefully it will freeze well. I agree though it needed a bit more punch. I sauteed the chicken and some onion which helped and added red pepper flakes. Also added grated parm - 7/5/10

    Added chopped onions, frozen chopped spinach and mushrooms and used tomato sauce instead of marinara. Also added more seasonings. Served it with penne pasta. It made enough to freeze a couple portions for lunches. Everyone loved it. Will definitely make again. - 9/7/10

    I agree with the comment that this can be a 45 minute meal. I cut the chicken into thin sclices and cut the veggies into smaller pieces. I added some italian seasoning for flavor. I put it over whole wheat pasta. Served with salad... no bread here. It was good for lunch the next day too. - 3/6/11

    This is okay. My celery and garlic didn't really cook properly, despite cooking for the full 7 hours. Also, it's more of a stew than I expected. I wouldn't spread it on bread, more of a pasta topping. - 9/27/10

    Okay, made this today but ate it like it was as we were too hungry to make some pasta or rice. It was "okay" but would have been a lot better with the pasta and a bit of parmesan sprinkled on top! Also, added some more spices and some mushrooms and chopped onions. - 9/9/10

    It was kind of blah until I added a can of cream of mushroom soup which gave it a nice creaminess. Also added fresh spinach part way through which kind of melted into the sauce. Will use a less acidic sauce next time, probably Rinaldi's mushroom sauce. served over whole whole wheat pasta. - 6/1/10

    Made this yesterday. I absoluetly love it! My kids on the other hand, hate chunky vegetables in stuff and even though I sauteed them before I put them in, they did not like it. :( One of my sons did and the rest of the kids fixed sandwiches. - 1/20/10

    this was great. I used whole wheat pasta with this and carefully measured out a cup of each along with a piece of garlic bread and it came to 488 cal. Was very good in my opinion and even my picky mate cleared his plate. I froze the left over sauce. - 7/22/10

    I made this over the weekend and most of the comments about adding more spice, they were right. I added and onion, 3 more cloves of garlic AND I grated them all on a microplane so the flavor is more intense. I also added mushrooms, tripled the basil, no thyme, and 1 Tbsp oregano.

    This has become one of our family favorites! I add chopped onion, mushrooms, okra, capers, baby carrots, sundried tomatoes, and sometimes artichoke hearts. When we're splurging I make it with Italian sausage instead of the chicken. We stay low carb and eat this like a hearty, thick soup. - 3/29/11

    This was very good. I added a chopped onion and sliced mushrooms, and I used a can of diced tomatoes instead of fresh ones. Next time, I won't use the celery since it didn't cook down soft enough as all the other veggies did. It was good over brown rice. - 3/29/11

    To overcome low sodium "bland", just add more spices/herbs, onions, etc. I prefer using tomato puree as it's even lower in sodium than the canned tomatoes, tomato sauce or pasta sauces. "Low sodium" just means they changed their recipe--the product may contain quite a bit of sodium. READ LABELS! - 3/28/11

    Though many say that this is missing something, I think what they really are searching for is salt--I did add a little and also added brown minute rice about a hour before it was done.     I cut up a whole chicken, skinned it and used the "meaty parts" --also added chopped cabbage because I wanted a lot of veggies in it.

    I also have a double slow cooker and so I put brown rice and water in the small side, so that by the time the main dish was done, I had brown rice to go with it! - 2/4/11

  • My whole family loved it. Didn't have any pene pasta, so served with spaghetti noodles, they still loved it. I will make it again, it will become a regular at our house. Very easy to make. - 1/24/14

  • Loved this. I used - 2 med. zucchini, 4 celery stalks, and 2 bell peppers - and homemade sauce in the freezer that I thawed and poured over the top. Added 1/4 C. chopped olives and more seasoning before serving. Hubby loved it! Served it in a bowl as you would serve chili with shredded mozzarella. - 1/21/14
