Introduction

I'm getting bored of bland, flavorless "diet food", So here's a potato and peas side dish that is neither boring nor bland. It's like a party in your mouth in fact. And it'll leave your belly satisfied.

I like to serve this with the Curry Chicken Recipe I submitted over Basmati Rice.

Number of Servings: 10

Ingredients

    3 Tbsp Extra Light Olive Oil

    8 Medium Red Potatoes (chopped and quartered)

    2 Tbsp Curry Powder
    2 TbspTurmeric
    2 Tbsp Chili Powder
    2 Tbsp Garlic Powder
    3 Tbsp Salt (or to taste)

    3 Cups Frozen Peas

    1/4 Cup Water

Directions

Sautee Potatoes in Olive Oil in large skillet

Combine all dry ingredients and mix in with Potatoes

Pour 1/4 cup of water in Skillet, lower heating element and cover for about 10 min or until Potatoes are half done

Mix in Frozen Peas and cover until potatoes are done, stirring occasionally to prevent sticking to skillet. Approx. 10 extra mins. Potatoes will cook faster with steam if skillet is covered.

Makes 10 3/4-cup servings
