First Place Hearty Macaroni & Cheese

Introduction

Number of Servings: 8

Ingredients

    8 ounces elbow macaroni
    1 cup egg substitute
    8 ounces shredded low-fat cheddar cheese
    1/2 cup flour
    8 tablespoons butter
    3/4 teaspoon salt
    1/4 teaspoon black pepper
    4 cups nonfat milk

Directions

Boil macaroni and drain. Make white sauce with flour, butter, salt and pepper in gravy shaker. Heat in large sauce pan until thickened. Add cheese to white sauce. Gradually add egg substitute and macaroni to white sauce mixture. Spray 13x9 baking pan with nonstick spray. Pour white sauce mixture into pan. Sprinkle with paprika if desired. Bake at 350 degrees for 40-50 minutes until mixture is golden brown on top. Serves 8.
