Fresh Spinach Quesadillas

Introduction

I am putting in the exact ingredients I used, so be aware that a different tortilla or a different cheese (especially a lower fat cheese) can make a pretty big difference in calories. I adapted it from a cooking light recipe because I couldn't find the lower fat monterey jack cheese and wanted to use high fiber tortillas. Ingredients



    * Spinach, fresh, 120 grams (about four cups)
    * Scallions, raw, 65 grams (4 medium)
    * Lemon juice, 2 tbsp (I used fresh lemons)
    * *Cumin seed, 1 tsp
    * Garlic powder, 0.5 tsp
    * Ricotta Cheese, part skim milk, 62 grams (1/4 cup)
    * Monterey Cheese, 3.5 oz (I used the 365 brand)
    * Trader Jose's Whole Grain Tortillas with rolled oats and flax seed, 6 serving
    * Red Ripe Tomatoes, 110 grams (1 small or 10 large cherry tomatoes)

Directions

Sautee vegetables in lemon juice and spices until spinach has wilted. Transfer into a bowl. Add cheeses. Spoon 1/3 of the mixture onto each of three tortillas. Top with the remaining tortillas. Return to skillet. Cook on each side on medium high for 2-3 minutes or until cooked through.

May serve with sour cream and/or guacmole or fresh avocado. (Not included in calorie count here)
