"Cheesy Goodness" Soup

Introduction

I made this soup for my husband and he dubbed it "Cheesy Goodness"! Great for cool days. I made this soup for my husband and he dubbed it "Cheesy Goodness"! Great for cool days.
Number of Servings: 12

Ingredients

    Potatoes--3 cups cubed
    Carrots--2 cups chopped
    Celery--2 cups chopped
    Broccoli--3 cups chopped
    6 cups of water
    Chicken boullion--3 tsps.
    2 cans Cream of Chicken Soup
    Velveeta--1 lb.

Directions

Add boullion and 6 cups of water to pot. Chop/cube vegetables and add to water. Bring to a boil, boil for 1/2 hour or until vegetables are tender. Lower heat and add 2 cans cream of chicken soup, stir until mixed well. Cube 1 lb. Velveeta and stir into the soup. (Make sure to keep stirring, it will stick to the bottom of the pot!). Serve once all the Velveeta is warmed up!

Makes 12 8 oz. servings.

To lower sodium, you can use Campbell's Healthy Request Cream of Chicken soup.

    This recipe is outstanding! It is delicious, I added a little garlic and onion, and a small piece of leftover chicken breast, my husband has bragged to everyone this weekend about the great cheesy soup I made. - 10/1/09
