Salmon Cucumber Salad w/ Sour Cream-Dill Dressing

Ingredients

    2 Large Cucumbers, peeled, halved lengthwise, seeds scraped out, and thinly sliced-(english style cucumbers)
    Salt
    1/4 medium red onion, thinly sliced
    6 tablespoons red wine vinegar
    1/2 teaspoon dried dill
    Freshly ground black pepper
    4 4-5 oz salmon fillets
    olive oil

Directions

Toss cucumbers w/ 1 tsp salt in colander. Let stand, set over a bowl, until several tbsp's of juice have drained, 30-45 minutes. Pat cucumbers dry and transfer to a medium bowl. Add onion, sourcream, vinegar, dill, and pepper to taste and toss to coat.
About 30 minutes before serving, heat a gas grill, with all burners on high,for 10-15 minutes. Use a wire brush to clean grill rack, then use tongs to wipe a vegetable-oil-soaked rag over grill rack to prevent sticking. Close lid and return to temperature.
Brush salmon on both sides with oil and season with salt and pepper. Grill until just opaque, about 3 minutes per side. Serve hot or just warm. Place fillets on plates and spoon cucumber salad over and alongside salmon and serve.
