I got this fast & yummy recipe from a dear friend that I worked with in AZ. It's quick, and I usually have everything I need to make it in the pantry. Plus, it's under 300 calories per serving! Ingredients

1 C. cooked cubed chicken breast
1 C. frozen or canned corn
1 4oz. can chopped green chili peppers, drained
2/3 C. 1% milk
3/4 C. flour
salt & pepper to taste
1/2 tsp. chili powder
1/2 tsp. ground cumin
dash garlic powder
1/2C. lowfat Cheddar or Mexican Blend cheese
1/2 C. salsa
Optional items not listed in nutrition totals: Nonfat sour cream & black olives
Directions
Spray a 9 inch pie plate with pam
In a medium bowl stir together chicken, corn and green chilis. Spread mixture in pie plate.
Using same bowl, stir together eggs 7 milk. Beat in flour, about half of the cheese, salt & pepper.
Pour this mixture over chicken in pie plate.
Bake, uncovered at 400' fro about 25-30 minutes. The top should be set & lightly browned.
Sprinkle with remaining cheese and bake till it melts.
Serve with salsa & sour cream.
