Yummiest fruit and nut quick bread

Number of Servings: 30

Ingredients

    11/2 cups of Organic sugar
    1 stick of real unsalted butter (softened)
    4 eggs
    3 black bananas
    1 large orange
    1 cup of strawberries
    2 thick slices of fresh pineapple
    4 cups of whole wheat pastery flour
    2 tsp wheat germ
    2 tsp cinnamon
    11/2 tsp coriander
    1/2 cup almonds
    1/2 cup raw cashews
    1/2 tsp salt
    2 tsp baking soda

Directions

Two days before you start the bread you start the fruit as this ferments to a small degree.

You will need three over ripe bananas and if you do what I do, I freeze mine untill I have enough for banana bread or this recipe.
If the bananas are frozen, thaw them and then take peel off and mash the bananas.
Next dice up fresh pineapple and add to bananas.
Next wash and dry strawberries, hule and slice.
Add strawberries to banana mixture.
Next roll your orange to get the juice going in the orange and then zest the whole orange.
I find that a zester is best for this.
After you zest your orange you will need to peel and then segment the orange over a bowl to catch all the juice.
Cut up orange, into small chunks, over bowl and then add to fruit mixture.
Cover and refridgerate for two days.

On the day the fruit is ready, take your butter out of the fridge and then let both come to room temp.
Preheat oven to 325 degrees.
Messure out sugar and cut butter into chunks, add together.
Cream sugar and butter untill its creamy.
Then add eggs one at a time, beat well between eggs.
Next messure out all dry ingredients and then add cinnamon, coriander, wheat germ and nuts to the dry ingredients.

Then add the egg mixutre and fruit mixture to the dry ingredients, all at once.
MIx till blended together, make sure it is up from the bottem.

Grease two loaf pans, the kind you use for bread and meatloaf.
Then evenly fill both pans, this should come to a bit under the top of the pan.

shake and thump, on the counter, the bottems of the pans, this is to eliminate air in the batter.
Put pans in preheated oven at mid oven and bake for an hour 25 minutes or untill a toothpick comes out clean when inserted in the center

Turn out on rack to cool, turning to cool evenly.
Packkage, slice and refridgerate when cool.
