Garden Vegetable & Lentil Soup

Ingredients

    4 c. chicken broth
    6 c. water
    3 carrots, sliced
    1/2 c. onion, chopped
    1/2 can tomato paste
    3 t. garlic, minced
    4 c. cabbage, chopped
    3 c. zucchini, chopped
    1/2 c. corn
    1/4 c. lentals

Directions

Saute' garlic, onion, & carrots in a pot with non-stick cooking spray (about 5 minutes). Add broth, paste, and water. Bring to a boil, turn down to simmer and add cabbage and lentils. Cook for about 15-20 minutes. Add zucchini and corn. Cook for an additional 5-10 minutes. Serve.
