Ingredients

1 cup unsalted raw pistachios
2 cups (packed) fresh cilantro leaves
2 tablespoons fresh lemon juice, divided
1 garlic clove, chopped
1 teaspoon ground cardamom
.75 teaspoon salt
.25 cup olive oil
3 second oil spray
4 large chicken breasts, halved, skinless, boneless
Directions
Makes 8 servings
• Toast pistachios on baking sheet until golden, about 7 minutes. Transfer to processor. Add cilantro leaves, 2 tablespoon lemon juice, and next 3 ingredients to processor. Using on/off turns, process until coarse paste forms. With machine running, gradually olive oil. Season pesto with pepper.
• Spray microwavable baking pan that is just large enough for the breasts with oil spray. Lay chicken in baking pan.
• Spread pesto over chicken making sure all visible surfaces are covered.
• Cover and microwave on high for 3 minutes and at 50% for 10 minutes. Times are approximate for 1100 W oven.
