Hawaiian Meat Loaf with Peanut Glaze

Ingredients

For Meat Loaf:
2 lbs Jennie-O extra lean turkey breast
1 cup of bread crumbs
8 oz can of crushed Hawaiian pineapple, drained
1/2 cup chopped bell pepper
1/2 cup chopped onion
1/4 cup chopped celery
2 large eggs, beaten
1/4 cup milk
1/4 cup soy sauce
1 tbs finely minced fresh ginger
1/2 tsp salt
1/2 tsp pepper
For the Peanut Glaze:
1/2 cup of Orange Juice
1/2 cup of soy sauce
1/2 cup of creamy peanut butter
2 tbs rice wine vinegar
2 tbs brown sugar
1 tsp minced fresh ginger
1 tsp minced garlic

Directions
Makes ~~ 10 4 oz servings of meat
Heat oven to 350 degrees F.
For the meatloaf, combine all of the ingrdients in a large bowl and gently mix until well blended. Put into a loaf pan and bake about 50 minutes, or until done.
While the meatloaf is baking, make the Peanut Glaze.
For the Peanut Glaze:
Combine all ingredients in a saucepan and bring to a boil, stirring constantly. Lower the heat and continue to cook until thickened.
Pour about 1/4 cup of the peanut glaze over the top of the meat loaf 5 minutes before the end of the cooking time. Serve remaining warm peanut glaze on the side.
Note: to reheat in microwave, use a low or reheat setting to avoid burning the glaze.
