Introduction

This is a surprising replacement for cream--it is 95 calories for a 1/3 cup serving, but less than 2 grams of fat and 11 grams of protein (compared to 100 calories, 10 grams of fat & 2 g of protein in half-and-half cream). It's great with mixed fruit for a satisfyingly rich dessert or snack. Ingredients

    2 cups 2% cottage cheese
    1/2 cup 1% milk
    1/4 cup powdered sugar

Directions

In blender, place 2 cups of cottage cheese and 1/2 cup of milk. Blend on high for 2-3 minutes. Slowly add the powdered sugar and continue to blend until absolutely silky smooth.

Chill until ready to serve.

Makes 6-1/3 cup servings. Goes great with mixed fruit (I used blueberries & nectarines). I also use this with my Raspberry Dutch Baby.

  • Wow!! I use fat free cottage cheese, I wonder if it would still taste great. I also would have ot replace the sugar with splenda, but I will try it, I have gallons of fresh raspberries from my garden just waiting for this!! - 10/2/09
