6 cups cauliflower florets (1 large cauliflower) cut small
3 garlic cloves, chopped
1/4 cup olive oil
kosher salt and pepper for taste
juice of 1/4 lemon (approx 1 Tbsp)
1/4 cup Parmesan cheese, freshly grated
2) Combine cauliflower, olive oil, lemon juice, garlic, salt and pepper so all the florets are coated/seasoned. Place in a large shallow roasting pan and place in the center of the oven.
3) Roast for 1 hour, turning florets approx every 20 minutes until slightly crispy. Remove from oven and top with parmesan cheese and additional salt and pepper if needed.
