Ingredients

1/2 cup black-eyed peas
1/2 cup navy beans
1 cup northern beans
1.5 TBS. olive oil
2 cloves garlic, minced
5 large tomatoes, skinned, chopped, with juices
1 jalapeno pepper, chopped
1 small potato, peeled, boiled, chopped fine
1 tsp. sage, ground
12 leaves sage, fresh minced
1/2 tsp. salt
1/4 tsp. black pepper
Directions
Makes 4 servings.
The time will vary greatly, depending on whether you use can or fresh beans. It's good both ways, but I like the fresh beans when using as a meal. It gives the dish more texture.
Heat oil in large skillet. Add garlic, tomatoes and their juices. Cook uncovered for 5 minutes, stirring occasionally. Stir in spices. Continue cooking 20 more minutes. Add in beans and stir well. Cook 2-5 minutes.
