AAA American Meatloaf

Ingredients

    1 cup Onions, raw, chopped
    1 cup Red Bell Peppers chopped
    1/2 cup Green Bell Peppers, chopped
    1 cup Celery, raw, diced
    3 tbsp Parsley, minced
    1 tsp Pepper, black ground
    2 cloves Garlic, minced
    1/2 cup Eggbeaters
    3/4 cup Quaker Quick Cooking Oats
    2 lbs Turkey, Ground 93% lean
    4 tbsp Ground Flax
    1 cup Carrots, raw, grated
    1/4 cup Ketchup

Directions

Preheat oven to 350 F.

Combine all of the ingredients [except for the Turkey] in a large bowl and toss to moisten oats. Add the Turkey and mix just until blended. Pack the mixture into a loaf pan well coated with cooking spray. Brush ketchup over top of loaf. Bake for 1 hour or until thermometer registers 160F. Let loaf stand in pan 10 minutes before serving.

Makes 12 servings.
