Ingredients

1 teaspoon butter
2/3 cup cornmeal
1 teaspoon sugar
1/4 reaspoon salt
1 1/3 cup boiling water
2/3 cup 1% milk
2 eggs
1 teaspoon baking powder
Directions
Preheat oven to 450 degrees
Set water to boil.
For each serving use 1/2 teaspoon of the butter or margine to grease a 2-cup baking dish, shallow gratin dish or souffle dish; set aside
Sift the cornmeal, sugar, and salt into a heat resistant mixing bowl. Pour in the water and stir vigorously until the mixture is smooth.
Beat in the milk, eggs and baking powder. Pour the batter into the prepared dishes. Set on a baking sheet and place the sheet in the middle self of the oven. Bake for 25-30 minutes or intil puffed and golden brown. Serve immediately.
