Introduction

I love making my own sauce. This recipe makes plenty to keep left overs in the fridge so you dont have to make it every time. I calculated six half cup servings. I combined 2 different recipes and it turned out great! I love making my own sauce. This recipe makes plenty to keep left overs in the fridge so you dont have to make it every time. Ingredients

    1 TBSP olive oil
    1 small onion, chopped
    1 small carrot, chopped
    1 celery stalk, chopped
    2 garlic cloves
    1 14 oz can of diced tomatos
    1 5.5 ounce jar of tomato paste
    1/2 TBSP dried basil
    1/2 tsp salt
    1 tsp sugar
    1/4 cup parsley, fresh if you have it
    1 TBSP red wine vinegar, NOT BALSAMIC

Directions

In a medium sauce pan on medium high heat, saute onions in oil until translucent. Add carrots, celery, and garlic and saute two more minutes. Add tomato paste and diced tomatos, basil, salt, and sugar (or maple syrup), and let simmer 20 minutes. Turn off heat, stir in parsley, and vinegar. Let sit 5 minutes before serving. Makes approx. 6 one half cup servings.
