2 tsp. canola oil
1 cup chopped onion
3 garlic cloves, minced
1 (14 oz) can vegetable broth
2 T. tomato paste
1 tsp. snipped fresh oregano or 1/4 tsp dried oregano, crushed
1 tsp. adobo sauce from canned chipotle peppers in adobo sauce or 1/2 tsp adobo seasoning
1 (15 oz) can red kidney beans, rinsed and drained
1 T. snipped fresh cilantro
2 cups hot cooked brown rice
Serve stew with rice. If desired, serve with lime wedges. Makes 4 servings.
