1 1/2 cup of fresh diced tomatoes or 1 can of finely diced tomatoes
2 Jalapeno Pepper, finely diced and seeded
2 tbsp Cilantro (fresh or dried)
1/4 cup Raw Onion - white or red (or a combination)
Garlic, 1 clove, diced or crushed
Juice from 1/2 small lime
1/2 tbsp. Pure Olive Oil
Dash of fresh ground black pepper
Dash of Salt (omit if using canned tomatoes)
Cover and refrigerate for 8 - 12 hours before serving.
Makes approximately 4 servings.
Serving Size = 1/3 Cup
