Dawndee's Speedy Chicken Pasta

Ingredients



    STEP 1: Boil 1 qt. water for pasta, then place Thawed Chicken Breasts on a George Foreman Grill 8-12 min. depending on size. Thinly lice chicken and set aside.

    STEP 2: Cooked Whole Wheat Pasta: Mix olive oil, spice. Mix into cooked pasta, add chicken slices and set aside.

    STEP 3: Use a Mini Processor to finely chop the next four ingredients.

    1 Med. Tomato, diced
    1 lg. Celery Stalk, diced
    1/2 C. Chopped Onion
    1/2 cup Grated Carrot

    Heat a non stick pan, using cooking spray, sauté
    Add tot he hot pan:
    1 Tsp Garlic (minced) to a light golden color to release the flavor, add olives and
    1/4 cup Salsa, stir about 30 seconds, and add the processed veggies till semi tender about 3 min over med/ Hi heat.
    Mix : Veggies and Pasta with Chicken lightly and sprinkle 3 Tablespoons of Parmesan Cheese to mix evenly and serve hot.

    Served with a side salad, this is a fantastic healthy meal under 400 calories!
    This meal leaves me feeling very satisfied and loaded with energy!
