Easy Low-Cal Chicken Enchiladas

Introduction

Ingredients

    1 Chicken Breast, Cooked and Diced Finely
    2/3 Cup Frozen Spinach (cut and thawed)
    1 Cup Onion, Diced Finely
    2/3 Cup Black Beans drained
    2 Cups Cheddar Cheese, Grated
    1 Large Can Enchilada Sauce
    16 Small Corn Tortillas (6" round)

Directions

In a large bowl, mix the chicken, spinach, onion, beans, 1 cup cheddar cheese.
Warm tortillas in the microwave until flexible (about 40 seconds)
In a rectangular baking dish place one tortilla, spoon in a large spoonful of chicken mixture, roll the tortilla seam side down, push to the edge of the baking dish. Repeat until all tortillas are used.
Pour the enchilada sauce over the rolled tortillas to coat. Sprinkle with the remaining 1 cup of cheese. Cover with aluminum foil, bake at 357 degrees for 40 minutes.
