Introduction

Yummy vegetarian treats. Easy to make and my kids love them! Yummy vegetarian treats. Easy to make and my kids love them!
Number of Servings: 6

Ingredients

    1 10oz package of frozen chopped spinach, thawed and drained well
    1 can chickpeas rinsed, drained and chopped in the food processor
    1 cup whole wheat breadcrumbs
    2 eggs, lightly beaten
    1/2 tsp kosher salt or pinch table salt
    1 tsp ground cumin
    1/2 tsp garlic powder
    pinch ground pepper

    1 Tablespoon olive oil for cooking

    Mix all except oil ingredients together. Shape into small patties (I use a Tablespoon cookie scoop.) Heat 1 Tablespoon of olive oil in a skillet over medium heat. Cook patties 3 min on each side until golden brown.

    Serve as a side with burgers or a light lunch paired with a salad.

Directions

Makes approx 18 small patties. Serving is 3 pattties.
