Introduction

Unstuffed stuffed peppers with lentils and beans -easy and tasty Unstuffed stuffed peppers with lentils and beans -easy and tasty
Number of Servings: 6

Ingredients

    6 bell peppers, coarse chopped
    1 med onion, chopped
    3 cloves garlic, diced
    1/2 lb lean ground turkey
    1 c brown rice
    1/2 c lentils
    1 can Hunt's diced tomatoes
    3 c water
    1 can red kidney beans, rinsed
    1 tbsp olive oil

Directions

Saute onions & garlic until onions are translucent. Add peppers and saute for 5 mins. Remove everything from pan, then lightly brown ground turkey. Sitr in rice and lentils, add tomatoes and water, stir. Re-add pepper mixture. Cover and cook on low for about 50 minutes, or until rice and lentils are cooked. Turn off heat and then stir in kidney beans. Let rest for 15 minutes.
