Healthy(er) Chicken Dumplings

Introduction

My fiance's favorite Chicken Dumpling recipe, edited to add some veggies. My fiance's favorite Chicken Dumpling recipe, edited to add some veggies.
Number of Servings: 8

Ingredients

    6 small Chicken Breasts
    1 dash Salt
    2 Carrot
    1 stalks Celery
    3/4 c Onion
    1 tbsp Onion Powder
    1.5 c Flour
    2.5 tsp Baking Powder
    0.5 tbsp Salt
    1 Egg
    1 Egg White
    3/4 c Milk
    3 Chicken Bouillon Cubes

Directions

Combine chicken, dash of salt, and onion powder, and chopped carrots, celery, and onion in enough water for soup. Boil. When the chicken is cooked through, remove and cut into bite-size pieces. Add back to the broth with bouillon cubes. Turn to medium-low heat to simmer.

Mix flour, baking powder, salt, egg and milk. Drop by small spoonfuls into broth. Stir frequently and cook for about 45 minutes, or until dumplings are cooked through.

Each serving is *about* two cups - don't count on exact measurements, though! Your best bet is to divvy it up between bowls.
