If chicken breasts are raw, start by simmering them in water or broth on the stove, medium heat, for 30 minutes. Cool, then dice into 1/2 inch cubes. Place fat-free mayonnaise, fat-free sour cream, lemon juice, pickle relish, mustard, celery, and all spices into a medium bowl. Mix well, then add cubed chicken and stir until coated. Refrigerate. Tastes best after it sits a few hours to allow flavors to mix. You can adjust the pickle relish, mustard, and spices to your taste. Makes 9, 1/3 cup servings.
