Introduction

Delicious with ANYTHING. On the rare occasion there are leftovers, I bring them to work next day! Delicious with ANYTHING. On the rare occasion there are leftovers, I bring them to work next day!
Number of Servings: 5

Ingredients

    4oz dry Couscous
    400ml Boiling Water
    Juice of 1 Lemon
    1 Vegetable Stock Cube
    1 cup diced Raw Carrots
    2 Tablespoons Olive Oil
    1 can drained Chickpeas
    1 tsp Creole Seasoning
    2 tsps Mustard Powder
    2 tblspns Fresh Basil
    2 tblspns Fresh Mint

Directions

Add the stock cube to the boiling water and add to the dry couscous. The stock will be absorbed.

When couscous is cold, fluff up with a fork and add the remaining ingredients. Mix well.

Leave to marinate for an hour or two before serving.
