Spinach-Mushroom Salad

Ingredients

    Spinach, fresh, 4 cup (remove)
    Mushrooms, fresh, 1 cup, pieces or slices (remove)
    Egg, fresh, 2 cup (4.86 large eggs) (remove)
    *Canola Oil, .25 cup (remove)
    Lemon juice, 2 tbsp (remove)
    Salt, .25 tsp (remove)

Directions

In bowl combine spinach, mushrooms, and sliced eggs. Cover and chill.
To make dressing, in screw-top jar combine canola oil, lemon juice, salt, and a few dashes of fresh pepper and garlic. Cover and shake to mix well. Chill. Pour over salad just before serving; toss to coat vegetables. Makes 4 to 6 servings, servings calculated on 4 servings.
