Lentil Tomato Pasta Sauce

Introduction

This healthy sauce is easy to make, tastes great, and is full of protein and fiber (10 g each!) This healthy sauce is easy to make, tastes great, and is full of protein and fiber (10 g each!)
Number of Servings: 4

Ingredients

    1/2 tsp olive oil
    1 c chopped onion
    1 tsp fresh minced garlic
    1 can of tomatoes (medium)
    1/3 c tomato paste
    2 c water (approximately)
    2 c cooked lentils
    1 tsp thyme
    1 tsp oregano
    1 tsp mixed herbs
    1 bay leaf
    pinch of sea salt
    fresh ground pepper to taste

Directions

Pour olive oil into a medium-large pot over medium-high heat.
Add onion and garlic and cook, stirring often until the onions are tender and translucent.
Add tomatoes (breaking them up with your hand, if whole), tomato paste and water (I just fill up the empty tomato can with water and use that much)
Stir through and add herbs and lentils.

Simmer on medium heat, stirring occasionally until the extra water has evaporated, and the sauce is thick (approximately 20 minutes)

Remove bay leaf and serve hot over whole wheat pasta.

Makes four 1 cup servings.

    I modified a bit- used 2 fresh tomatoes finely chopped instead of the canned tomato. also added basil, garlic powder, and some parsley. everyone loved it, including my 6 year old son. Will definitely make again. I will give it 5 stars, but I did need to add more seasonings. - 7/18/11

  • great idea, a+ for creative use of lentils. will definitely do again, but i had to intensify and add spices in a major way. it was on the bland side for my tastes. - 3/8/08
