Turkey Stroganoff

Introduction

Number of Servings: 4

Ingredients

    1 pound lean ground turkey
    1/2 cup reduced fat sour cream
    1 onion
    2 tbsp light margarine
    1/2 pound fresh mushrooms
    2 tbsp flour
    1/2 cup 1% milk
    4oz. uncooked pasta - I used Ronzoni whole wheat penne rigate (all I had on hand at the time).

Directions

Spray pan with nonstick spray.

Saute veggies until they reach desired consistency.

Remove veggies from pan.

Add ground turkey to pan and saute until cooked thoroughly.

Return veggies to pan.

Add margarine to pan. When margarine is melted, sprinkle in flour and stir until dissolved.

Add milk and stir until thickened.

Let simmer on low heat for 5 minutes.

While the stroganoff is simmering on low heat, add noodles to boiling water and boil until slightly firm.

Go back to the stroganoff. If the mixture appears too thick for your liking, just a little bit more milk. Add sour cream to the mix. Stir.

Makes four servings. Divide both noodles and stroganoff into four equal servings and enjoy.
