Scalloped Potatoes

Introduction

Number of Servings: 12

Ingredients

    3lbs potatoes, thinly sliced (1380g) (approx)
    2 large onions, diced (280g)
    4 cloves garlic, minced (optional)
    4 tbsp margarine
    2 tsp salt
    pepper to taste
    4 cups skim milk
    1 - 2 tbsp flour

Directions

Serves 12. (I didn't measure the exact quantity but it would be approximately 3/4 cup.)

Slice the potatoes thinly. (I don't peel mine, others prefer them peeled.) Dice the onion and mince the garlic, if using. Layer the potatoes, onions and garlic in a 9" X 13" baking dish. Potatoes, onions/garlic, potatoes, onions/garlic, etc. In a small bowl, mix flour, salt and pepper (more flour makes a thicker sauce). Stir 1 cup of milk into the flour mixture, mixing out all lumps. Pour over the potato layers, then add remaining milk. Dot the top with the margarine.
Bake in a 350F oven for at least 1 hour.
